5 secrets of the cellar
1 Llicorella The vineyards of Celler de l’Era exhibit a rare characteristic in the Montsant wine appellation: the presence of llicorella. Llicorella is the local name for a kind of slate whose laminar structure enhance the nutrients concentration. It also retains moisture and stores heat, giving the wines a singular minerality.2 Privileged microclimate Celler de l’Era enjoys a unique microclimate. Protected by the Montsant mountain range, and the relatively high elevation at which Celler de l’Era vines are grown (between 1500 and 1800 feet) this microclimate is characterized by low rainfall (350-400 liters per year), a dry environment and a strong diurnal temperature range. This favor grape ripening and contribute to their acidity, providing the wines of Celler de l’Era smoothness and freshness.3 Organic farming Wines from Celler de l’Era are certified as organics by the Catalan Council of Organic Agricultural Production (CCPAE). This certification ensures that products follow the rules of organic farming throughout the whole process of production, processing, packaging and marketing. Organic viticulture excludes any treatment with synthetic chemical products (such as herbicides, pesticides and fertilizers) and limits the use of any product that may leave a residue in the environment.4 Respect Respect for the environment: For people. For tradition. This respect comes from caring for the land and can be identified in every step the winery owners take: from the low density planting of vines and handling harvest, carefully separating the stems from the berries, choosing the best grapes and manually rejecting those that are either too ripe or too green or separating off any stray leaves. This culminates in a gentle fermentation and ageing process and a limited amount of bottles produced per vintage. Every step is given the care it deserves.5 Technology and excellence In every decision, from selecting and preparing the land, to the winery design, we followed the same criteria: commitment to quality-sparing no effort, and taking advantage of the best available technology consistent with organic farming and production. Technology helps us keep the natural qualities of the grape: we limit the time between harvest and the delivery to the fermentation tank, we use a double sorting table, we fill tanks by using gravitational feed, we precisely control the temperature during the fermentation process. Celler de l’Era is certified according to ISO 14001:04 Environmental Management System.
