Manual harvesting with 10 to15 kg. boxes. Grazed and macerated 4 hours in cold, then bleeding and fermented in stainless steel tank with temperature control. Spontaneous clarification in cold and very gentle filtration to eliminate particles in suspension.

COLOUR: slightly light green and shades.
NOSE: subtle and complex, with citrus, aniseed and floral notes.
PALATE: agile mouth, fresh and with some volume that gives it a good aging potential.
Food & wine pairing: Dishes of Japanese cuisine such as sushi, grilled fish, seafood and also cheeses I can accompany perfectly, as well as dishes with a salty point will be a great combination.
